Zero-Waste Basil Pesto Ingredients:
3 c. Basil (with the stems to limit waste)
1 c. Raw cashews
1/2 c. Nutritional yeast
3/4 c. Olive oil
1 tsp. Salt
1/2 tsp. Pepper
Method:
Add all the pesto ingredients to a food processor and blend for 3-5 minutes. Enjoy on pasta, quinoa, zucchini noodles, orzo, or as a dip! Store in the fridge for up to 1 week or in the freezer for 4-5 months.
