Vegan Homemade Tortillas



Ingredients:

2 1/2 c. All purpose flour

1 tsp. baking powder

1 tsp. salt

1/4 c. Vegan butter (melted)

1/2 c. Hot tap water mixed with 1/2 c. boiled water

1/4 c. Additional flour to knead the dough

In a medium size bowl, combine the flour, baking powder and salt. Next add the vegan butter and water. Mix the ingredients together with a fork to form the dough. Place the dough on a surface where you can knead it for 3 minutes. Use some of the additional flour while kneading the dough and some while rolling out the dough. Divide the dough into 8 pieces and let it sit for 30 minutes. Use a rolling pin to roll out the tortillas. Heat up a non-greased cast iron pan on the stove. Cook the tortillas for 1-3 minutes on each side.


Yields 8 tortillas
