Total Time: 10 Minutes
Ingredients:
1/2 c. Vegan butter (chilled)
2 c. Powdered sugar
1 tsp. Vanilla
1/4 tsp. Salt
1 tbsp. Plant milk (almond, oat, coconut, soy)
1/2 c. Shredded coconut (unsweetened)
Method:
1) Cut 1/2 c. of vegan butter into chunks (~1/2 inch cubes).
2) Combine the vegan butter, 2 c. of powdered sugar, 1 tsp. of vanilla, 1/4 tsp. of salt, and 1 tbsp. of plant milk in a stand mixer bowl. Mix for 30 seconds on low and then increase the speed and mix for 2 minutes (or until the frosting is fluffy).
Note: You may need to use a spatula to mix the frosting together by hand to ensure all ingredients are mixed well.
3) Next, add 1/2 c. of shredded coconut (unsweetened) and mix for 30 seconds - 1 minute.
Enjoy on Banana Coconut Cake or on other baked goods like muffins, cookies, brownies and much more. Store in the fridge for up to 1 week.
Serving Size: 1 batch Banana Coconut Cake or 1 batch of another baked good (muffins, cookies, brownies)
