Tofu Scramble Breakfast Tacos with Asparagus and Golden Chedda Queso


Total Time: 50 Minutes

(Including the time it takes to make the Vegan Tofu Scramble with Asparagus & Vegan Queso).


Ingredients:

12 Corn tortilla (GF)

3/4 c. Fresh salsa (option to make Backyard Salsa)

1 Container of Golden Chedda

1/4 c. Sriracha


Optional Ingredients:

1/4 c. Fresh cilantro

1 Lime (cut into six pieces)


Method:

Preheat the oven to 200 degrees.


Click on the link to make the Vegan Tofu Scramble with Asparagus . While that is cooking make the Golden Chedda Vegan Queso. Once those recipes are prepared gather the additional ingredients: tortillas, salsa, and sriracha.

Lay the tortillas on a baking sheet and warm for 12-15 minutes (this step is optional).


Fill each tortilla with a generous amount of warm tofu scramble. Top each tortilla with 1 tbsp. of salsa, 1 tbsp. of Golden Chedda Vegan Queso, and 1 tsp. of sriracha.


Option to garnish the tacos with freshly chopped cilantro and a lime wedge. Serve the tacos warm.
