Sweet Potato Latkes (Vegetarian)

Hanukkah is the Festival of Lights which is a Jewish holiday that is observed for eight days. During the holiday, we light the menorah and light a new candle each evening. We celebrate Hanukkah by eating fried foods such as potato pancakes. This is a recipe that uses sweet potatoes rather than the traditional white potato.


Prep Time: 15 Minutes

Cook Time: 15 Minutes

Total Time: 30 Minutes


Ingredients:

1 1/2 lbs Sweet potatoes

1 Yellow onion

2 Scallions

1/3 c. All-purpose flour

1 tsp. Baking powder

2 Eggs (local or free range)

1/4 tsp. Cayenne pepper powder

1 tsp. Salt

1/2 tsp. Pepper

2 c. Canola oil (for frying)

1/2 c. Sour cream (optional for dipping)

1/2 c. Apple sauce (optional for dipping)


Method:

Peel the sweet potatoes. Use the grate attachment on the food processor to grate the sweet potatoes and onion. Squeeze the liquid out of the sweet potato and onion mixture with your hands before combining the mixture with the other ingredients. Place the sweet potatoes and onion in a bowl and add the scallions, flour, baking powder, eggs, cayenne pepper powder, salt, and pepper. Mix the ingredients together well.


Heat 2 c. of canola oil in the frying pan. Form the latkes with your hands and fry them on each side for 5 minutes or until they turn golden brown.


Option to enjoy with sour cream or apple sauce.
