Spinach & Artichoke Dip (Vegetarian)

Ingredients:
8 ounces Cream cheese (or vegan cream cheese)
1/4 c. Sour cream (or vegan sour cream)
1/4 c. Mayonnaise (or vegan mayonnaise)
2 Garlic cloves (minced)
1 tsp. Salt
1/4 tsp. Pepper
2/3 c. Parmesan cheese (shredded) (or vegan parmesan)
1 c. Mozzarella cheese (shredded) (or vegan mozzarella)
1 can Artichoke hearts (drained & chopped)
6 ounces Frozen spinach (mildly defrosted & drained)
Method:
Preheat the oven to 350 degrees. Combine the cream cheese, sour cream, mayonnaise, garlic, salt, and pepper in a small bowl. Mix the ingredients together with a fork. Add 2/3 c. parmesan and 1/2 cup of mozzarella cheese to the mixture. Next add the chopped artichoke hearts and mildly defrosted spinach. Mix the ingredients together well and transfer to a baking pan. Sprinkle an additional 1/2 cup of mozzarella cheese on top of the dip. Bake for 30 minutes or until the cheese is golden brown. Enjoy with crackers, vegetables, or much more.
