Spicy 🌶 Golden Chedda Mac & Cheese with Plant-Based Chicken Nuggets

The delicious hot sauce I use in this plant-based, creamy, cheezy, spicy Mac is Hillside Harvest Sun Kissed Tomato Hot Sauce. It is made locally by a friend of mine Kamaal Jarrett. The Plant-Based Chicken Nuggets are made by Nowadays. I was fortunate enough to speak with the lovely co-founder Max Elder about his journey creating a plant-based meat product and starting a successful business. Nowadays is expanding their sales network as well. They will begin selling at west coast Whole Foods locations!

Prep Time: 5 Minutes

Cook Time: 20 Minutes

Total Time: 25 Minutes


Ingredients:

12 Nowadays plant-based chicken nuggets

2 Containers of Golden Chedda

1 & 1/4 c. Boiling water

1 box of Banza Cavatappi (8 ounces)

2 tbsp. Golden Chedda Cashew Parmesan (Use as a topping or "breadcrumb")


Method:

First,

  1. Preheat the oven to 425 degrees.

  2. Bring a medium pot of water to a boil.

  3. Boil ~two cups of water separately in a teapot or electric boiler.

Second,

  1. Place 12 Nowadays plant-based chicken nuggets on a baking sheet and cook for 20 minutes in the oven (or until golden brown).

  2. Add the 1 box of Banza Cavatappi (8 ounces) to the pot of boiling water and cook for 9 minutes.

  3. Add 1 & 1/4 c. of boiling water and 2 Containers of Golden Chedda to a blender. Add 1/4 c. of Hillside Harvest Sun Kissed Tomato Hot Sauce and blend for 30 seconds.

Third,

  1. Remove the nuggets from the oven and chop them into bite size pieces.

  2. Drain the cooked pasta and transfer it to a medium size bowl.

  3. Pour the blended spicy Golden Chedda mac & cheese sauce into the medium size bowl with the cooked pasta.

Fourth,

  • Add the chopped nuggets to the bowl with the past and cheeze sauce. Stir the ingredients together well.

  • Drizzle on 2 tbsp. of Hillside Harvest Sun Kissed Tomato Hot Sauce to the top of the Spicy 🌶 Everything Mac & Cheeze with Plant-Based Chicken Nuggets.

  • Top the Mac & Cheese with 2 tbsp. of Golden Chedda in it's dry, shelf-stable, cashew Parmesan form. This gives the dish a whole new level of flavor and spice.

Store in the fridge for up to 1 week.
