Filling Ingredients:
8 Medium apples (any variety that is in season locally)
1/2 Lemon (juiced)
1/3 c. Sugar
1 tsp. Cinnamon
1 tbsp. Arrowroot powder (option to use cornstarch)
1/4 tsp. Salt
Topping Ingredients:
2/3 c. Light brown sugar
1/2 c. Gluten free flour
1 c. Gluten free oats
1/2 c. Almond flour
1/2 tsp. Cinnamon
1/4 tsp. Salt
2/3 c. Vegan butter (I use Earth Balance)
Method:
Preheat the oven to 375. Set aside a 9x9 baking dish. Slice the apples with the peel still on. Leaving the peel on tastes great and it limits food waste. Compost the apple cores. Add the sliced apples to a large bowl. Next, add the rest of the filling ingredients: lemon, sugar, cinnamon, arrowroot powder, and salt. Stir all of the ingredients together and then transfer the mixture to the 9x9 baking dish.
Use the same bowl to limit water waste from washing it. Add all of the topping ingredients: light brown sugar, gluten free flour, gluten free oats, almond flour, cinnamon, salt, and melted vegan butter. Stir the mixture together. Top the apples in the baking dish with this mixture and bake for 50 minutes or until golden brown. Remove the crisp from the oven and serve it warm. Option to serve the apple crisp with vegan ice cream!
