Two Styles of Avocado Toast

Mushroom Avocado Toast

Ingredients:

4 Baby bella mushrooms (sliced)

1 Garlic clove (minced)

1/2 tsp. Salt

1/2 tsp. Pepper

1 tbsp. Olive oil

1 tbsp. Tamari (or soy sauce)

1 Avocado (mashed)

2 Slices of bread

1 tsp. Red pepper flakes (optional)

1 tbsp. sriracha (optional)


Method: Heat the olive oil in a sauté pan. Add the garlic and mushrooms and cook for 5 minutes. Add the salt and pepper and remove from heat. Toast the bread. Add the mashed avocado to the bread. Add the mushrooms to the top of the toast. Add the red pepper flakes and sriracha, if desired.


Serving Size: 2


Kale Avocado Toast

Ingredients: 1 c. Baby kale 1/2 c. Cherry tomatoes (sliced) 1 Garlic clove (minced) 1 tbsp. Olive oil 1/2 tsp. Salt 1/2 tsp. Pepper 2 Slices of bread 1 Avocado (mashed) 1 tsp. Red pepper flakes (optional) 1 Tbsp. Sriracha (optional)

Method: Heat the olive oil in a sauté pan. Add the garlic, kale, and cherry tomatoes and cook for 5 minutes. Add the salt and pepper and remove from heat. Toast the bread. Add the mashed avocado to the bread. Add the kale and cherry tomato mixture to the top of the toast. Add the red pepper flakes and sriracha, if desired. Serving Size: 2
