Low Calorie Veggie Stir Fry

This is a perfect meal for lunch. There is minimal prep involved and it takes less and 20 minutes to make. If you are working from home and need to whip something up quickly in between Zoom meetings this recipe if perfect for you. This Stir Fry is both vegan and gluten free and jam packed with plant protein: 41.43g to be exact. It is also very low in calories with only 286 per serving. Next time you are looking for a healthy lunch option try this recipe. It will fill you up and keep you feeling light.

Prep Time: 5-8 Minutes

Cook Time: 12 Minutes

Total Time: 17-20 Minutes


Ingredients:

1 Large head of broccoli (roughly 3 c.) chopped

1 Small zucchini (roughly 1 c.) chopped

1 Can chickpeas (rinsed)

4 tbsp. Water

4 tbsp. Tamari (or soy sauce, coconut aminos. etc.)


Method:

Heat a medium sauté pan on the stove top. Add the chopped broccoli and zucchini. Heat the vegetables for 2 minutes and then add 2 tbsp. of water and cook the vegetables for 3 minutes. Next, add another 2 tbsp. of water and cook for 5 minutes. Finally, add the chickpeas and tamari and cook for 2 minutes. Remove the stir fry from the stove and enjoy. Store in the fridge for up to 1 week.
