Kosher for Passover Chocolate Covered Matzah (Vegetarian)

Total Time: 2 Hours & 25 Minutes


Ingredients:

3 Sticks unsalted butter (or vegan butter)

1 ½ c. Light brown sugar (or coconut sugar)

1 Box plain matzah (or vegan/ gluten free matzah)

1 12-ounce Bag of white chocolate chips (vegan optional)

1 24-ounce Bag of semi-sweet chocolate chips (vegan optional)

Optional Toppings: nuts, dried cranberries, heath bar, peanut butter, white chocolate chips, coconut flakes, mini chocolate chips, chia seeds.


Method:

Preheat the oven to 350 degrees. Turn the heat to a low-medium setting. Melt the butter and light brown sugar in a small pot. Stir the mixture for 5-10 minutes as it thickens. Keep the stove at a low temperature. If the heat is too high, the mixture will burn.


Line 3 baking sheets with compostable parchment paper. Place the matzah in a single layer on each of the parchment paper lined baking sheets. The matzah can be broken into pieces so they fit on the baking sheets. Pour the brown sugar and butter mixture onto the matzah. Use a spatula to spread the mixture evenly.


Bake the matzah in the pre heated oven for 10 minutes. Add the chocolate chips to the top of the matzah and place the matzah back in the oven for 30 seconds - 1 minute. Use the spatula to spread the melted chocolate. Add your choice of toppings. Place the matzah in the refrigerator to harden for 2 hours. Break apart and enjoy.
