Healthy Seasonal Berry Pie (Vegan & Gluten Free)

You need to try this insanely delicious pie. It is perfect for anyone, especially anyone with dietary restrictions.


My Aunt has a lot of dietary constraints and she thought this was the absolute best pie. Seriously, this is a direct quote: "Ali, this is the best pie I have ever had in my whole entire life." She loved it so much she has two huge pieces. Check out this super simple and satisfying recipe below.


Prep Time: 20 Minutes

Bake Time: 50 Minutes

Total Time: 1 Hour & 10 Minutes

Ingredients:

Pie Crust

1 1/2 c. Almond flour (blanched)

1/2 c. Arrowroot powder

3 tbsp. Ground flax seed

1 tbsp. Coconut sugar

2 tbsp. Water

1/4 tsp. Salt

6 tbsp. Coconut oil (refined)

Pie Filling

5 c. Fresh local & seasonal blueberries

1 c. Fresh local & seasonal strawberries (sliced into fourths)

6 tbsp. Maple syrup

4 tbsp. Arrowroot powder

2 tsp. Vanilla

Pie Topping

1/2 c. Hazelnut flour

1 tbsp. Maple syrup


Method:

Pie Crust

1) In a medium size bowl combine all of the pie crust ingredients: 1 1/2 c. Almond flour (blanched), 1/2 c. Arrowroot powder, 3 tbsp. Ground flax seed, 1 tbsp. Coconut sugar, 2 tbsp. Water, 1/4 tsp. Salt, and 6 tbsp. Coconut oil (refined).

2) Use your hands to mix the dough together well and then knead it into a ball.


3) Transfer the dough ball to a pie baking dish.


4) Use your hands and press the dough ball out (evenly) throughout the base of the dish and then upward on the sides of the dish. Form the entire crust through this process.


5) Place the crust in the freezer while you make the filling.


Pie Filling

1) Preheat the oven to 425.


2) Wash and rinse 5 c. of blueberries and 1 c. of strawberries.

3) Slice the strawberries into fourths.

4) Add all of the berries to a medium size bowl.

5) Stir in 6 tbsp of maple syrup, 4 tbsp. of arrowroot powder, and 2 tsp. of vanilla. Mix for 1 minute.


6) Transfer the filling into the crust.


Pie Topping

1) Combine 1/2 c. Hazelnut flour and 1 tbsp. Maple syrup in a small bowl. Mix the ingredients together with a fork.

2) Add the topping to the pie.


3) Bake the pie at 425 for 15 minutes.


4) Reduce the heat to 350 and bake for 35 minutes.
