Ingredients:
1 large Cucumber
1 Sweet potato
1 tsp. Olive oil
1 can Black beans (drained & rinsed)
1 Container of Golden Chedda Recipe
Method:
1) Preheat the oven to 400 degrees.
2) Chop the sweet potato into cubs.
3) Drizzle 1 tsp. of olive oil onto the potatoes. Bake for 30 minutes.
4) Slice the cucumber into round circles.
5) Make the 1 container recipe for Golden Chedda
6) After 30 minutes add the rinsed black beans to the baking sheet with the sweet potato. Bake for another 10 minutes.
7) Layer the cucumbers on a serving dish. Drizzle on half of the container recipe of Golden Chedda. Then, sprinkle on the baked sweet potatoes and black beans. Top the nachos with the other half of the recipe of Golden Chedda. Enjoy with friends!
Store in the fridge for up to one week.
