Ingredients:
1 Medium head cauliflower (chopped into florets)
1/2 tbsp. Sunflower oil
1/4 c. Buffalo sauce
4 Burrito wraps (GF)
1/4 c. Hummus
2 c. Arugula
1 tbsp. Sriracha (I like Kitchen Garden Farm)
Method:
1) Preheat the oven to 400 degrees. Lay the chopped cauliflower florets on a baking sheet. Drizzle the sunflower oil onto the cauliflower and mix it together. Bake the cauliflower for 30 minutes. Drizzle the buffalo sauce onto the cauliflower and stir together. Option to place the baking sheet back in the oven and cook for another 5 minutes.
2) Lay the burrito wraps down on a clean surface. Add 1 tbsp. of hummus to each wrap. Then, add 1/2 c. of arugula to each wrap. Add 1 c. of cauliflower to each wrap and drizzle on sriracha.
3) Roll the wrap up. Option to reheat the wrap in a sauté pan to crisp the tortilla. Serve warm.
